Nicotine suppresses appetite and slightly raises the rate you burn energy. Take it away and both reverse, so you are genuinely hungrier rather than imagining it. There is also a second thing going on that has nothing to do with hunger at all.
Two different things feel identical
The first is real. Your appetite was being chemically suppressed and now it is not, so food is more appealing and you notice hunger sooner.
The second is the hand-to-mouth habit looking for a job. If you vaped dozens of times a day, that reflex does not disappear because you stopped, and snacking is the nearest available substitute. A lot of post-quit eating is not hunger, it is a hand with nothing to do.
Low blood sugar feels like a craving
This one catches almost everybody. The shakiness, irritability and inability to concentrate that come with not eating properly are close to indistinguishable from nicotine withdrawal.
People skip meals because they are stressed about quitting, feel worse, read it as the quit going badly, and reach for the vape. Eating regular meals in the first fortnight removes a whole category of false alarms.
About the weight
Some weight gain is common, and it is usually modest and not permanent. It is also a poor reason to keep vaping, which is the comparison that actually matters.
If you want to manage it, do it by adding rather than restricting. Dieting hard during the worst weeks of withdrawal stacks two difficult things on top of each other and normally ends with both failing.
What helps
Keep something to do with your hands and mouth that is not food. Sugar-free gum, a bottle of water you actually drink, sunflower seeds if you want something fiddly.
Eat at regular times rather than waiting to feel hungry, since your hunger signals are unreliable for a few weeks.
Wait until the quit is solid before changing anything else. One hard thing at a time.
